These are crunchy and don't have a lot of ginger flavor, but they still ended up being my favorite of the bunch. Satisfying.

This cookies are crispy and crunchy, but luckily not too hard. I think they have sort of a brown sugar flavor so they are not too gingery, though there is a gingery aftertaste. All in all a satisfying ginger cookie.
